Four Star Mushrooms

Four Star Mushrooms is the most urban mushroom farm in the country — a specialty growing operation inside a 1965 industrial building in West Town, converted in 2022 into a working farm of sterile labs and climate-controlled grow rooms. Within the facility, a long corridor runs between rooms where airflow, humidity, and CO₂ are tuned varietal by varietal, and spent growing substrate leaves as soil amendment to help other regenerative producers. The mushrooms go to Michelin-starred kitchens, to the kitchen of FX's The Bear, and to grocery shelves across Chicagoland — and through the farm's direct-to-consumer Mushroom Club.
